Today’s topic is Gluten Sensitivity.
Did you know that an estimated 3 million Americans suffer from celiac disease? Clearly it is no longer a rare condition. Of those, 9 out of 10 cases go undetected or are misdiagnosed.
Also, it is a misconception that gluten sensitivity is principally a disease of the small bowel. Gluten intolerance has been identified as a contributing factor in a wide range of conditions such as ADD, depression, anxiety, osteoporosis, RA (Rheumatoid Arthritis), type 1 diabetes, CFS (Chronic Fatigue Syndrome), autoimmune thyroid diseases, migraine headaches, peripheral neuropathies, ataxia, and many more.
Gluten sensitivity should be considered as a state of heightened immunologic responsiveness to ingested gluten proteins in genetically predisposed individuals. The brain seems to be particularly vulnerable.
